Banh mi is a Vietnamese sandwich that's filled with protein and a ton of veggies. Banh mi translates to "bread", so we can't have banh mi without the baguette. If you need a quick meal, try out this recipe!
Tofu Bánh Mì
Ingredients
cooked tofu (try our soy garlic tofu recipe)
baguette, toasted
jalapeños, sliced
cucumbers, sliced
pickled daikon and carrots
cilantro
vegan mayonnaise, mixed with garlic powder and a pinch of salt to taste
Instructions
Slice baguette down the middle to split it open. If your baguette is long, cut it in half first (to the size of the sandwich you want).
Spread a layer of mayonnaise on the inside of the baguette.
Add in the tofu, cucumbers, pickled vegetables, and jalapeños.
